Fish! 


Japan is known for sushi, sashimi which only is possible with fresh fish.

Although that is true, the sashimi, the cut fish which is eatable raw lined up in the Japanese supermarkets are 2 days old!  2 days old meaning 2 days has passed since the fisherman got it from the sea.  Of course it has no problem been eaten raw because of how it was killed like 活け〆(Ikejime)and then presereved for shipping. 

Ikejime is a way to kill fish which started in Japan. Now it it not only the Japanese who uses this method.

Recently, APcompany of Tokyo enabled us to taste the fresh fish which was caught that day! Contracting directly with the fishermen and enabling the fish to be shipped in to Tokyo during the daytime.  The president of APcompany says the less then a day old fish tastes different from the one that is older. And thus, super fresh fish can make more Japanese realize or re-realize fish is really tasty.

Yes, one of the great reasons to be living in Japan is being able to eat sushi and sashimi when ever I want!
